Chef Edouardo Jordan’s take on this southern classic spread includes sharp cheddar cheese, red sweet peppers, spices, mayonnaise and more.
Pimento cheese was originally created in the South when sweet peppers, also known as pimento peppers, were mixed with cheddar cheese to form the spreadable delight we know it as today.
We like to load this cheesy delight, which Edouardo and his team market through Food with Roots, onto an oyster and then roast it in the oven for 8 minutes at 400 degrees.
It also plays well with crackers, cured meats (sliced ham), pickled vegetables, stirred into mac n cheese, or spread on sandwiches and burgers.
