Douglas-fir Jelly

Every spring we leave the shoreline and head into the hills to handpick the delicate, flavorful new growth from the tips of Douglas-fir branches in our upstream tree farm. Back in the kitchen, we steep the tender tips into a tea, which we mix with sugar and pectin to make this deliciously tangy preserve. Its citrus-and-mint flavor catches the essence of the forest in springtime, full of growth and possibility. Spread it on toast, sandwich it over sharp cheese, or melt it into a syrup for various concoctions. Handmade by us with tips harvested from our tree farm, and sold in 4 oz jars.
