Description:
Also native to Japan, Kumamotos are a close cousin of the Pacific. Because they’re famously tricky to farm, we grow them on multiple beaches around the Puget Sound, in areas where there’s enough food and current to satisfy this famously slow growing oyster. Wherever they’re grown, expect an oyster that’s small, compact, and naturally deep cupped, with the sweet, fruity, and friendly flavor you’d expect of a Kumamoto oyster. Availability is extremely limited - we usually offer them through our website around Valentine’s Day.
This oyster is a different species from most of our other oysters. We harvest it from several locations without changing the name, for three reasons: 1) Kumo flavor (like Olympia flavor) appears less sensitive to merroir than Pacific flavor and 2) we grow and sell such a tiny quantity and 3) come on, Hamamoto? we couldn't resist.
