Description:
These are bag-to-beach Pacifics we source from several small-scale farmers in Pickering Passage, a narrow body of water near Shelton, Wa, where an exceptionally strong tidal current creates an exceptionally productive oyster growing region. Flavor wise, these have a medium high brine, a medium meat-to-shell ratio, with a flavor that tends towards savory rather than fruity, with notes of kelp and celery. Their fast growth creates colorful, sharply fluted shells.
