Sample the only native oyster to the West Coast!
These oysters are diminutive, but don't worry - they're memorable. They're famous for a coppery metallic flavor that occasionally has notes of citrus and seaweed. In size, flavor and overall appearance they're very, very different from the other oysters on our site, which are all Pacific oysters (a species originally from Japan, now farmed worldwide.)
Olympias are rare, but still found in the wild, despite having had a rather rough time over the past several centuries. (Read our blog post for some backstory). They live naturally on our beach, but we only sell Olympias that we farm from seed.
Slow growing, and with a relatively short shelf-life, these oysters are fairly hard to find anywhere outside of Seattle. We highly recommend them - they're novel and old fashioned all at the same time.
Try to eat them within 1 to 3 days of receiving them - they don't have the adductor muscle strength of our Pacifics so don't keep as well in a refrigerator.
Note that this is an add-on only... it won't be shipped out by itself. Because this product requires refrigeration, it needs to go in a box with oysters and clams. Add it to a Farm Sampler to get maximum oyster variety!
Remember that consuming raw or undercooked shellfish increases the risk of foodborne illness.
