Summerstone® Oysters
This is a 3 dozen bag of our Summerstone Oysters.
Our summertime oyster farm is located near a place called Skunk Island, up on the northern end of the Olympic Peninsula in the Straits of Juan de Fuca, where the water stays cool all summer. We grow oysters from seed up at the Skunk Island farm, but also move them up there throughout the year from other locations so that we can have cold water oysters to sell in the hot weather months.
These are definitely ocean oysters... they're sweet on the finish but incredibly briny up front. Every once in awhile, one of them will taste like a timewarp back to early spring on our farm, with the bright flavor of an oyster just emerging from hibernation to enjoy the new season's algae. They're beautifully cupped with a hint of frill at the edge, evidence of their bag-to-beach grow out method. Available only in the summer, overnight shipping only.
