One of the things that makes our company special is that we farm on both sides of the tideline... working in the forest and on the tideflats. We're always looking for ways to honor the connection between uplands and lowlands, and this beautifully crisp white wine vinegar and fir tip concoction fits the bill perfectly. Add a drop or two to your raw oysters... the lemony, bright flavor of the mignonette is an excellent complement to the sweetness of the oyster, and the acidity of the mignonette balances the brininess.
