Razor Clam & Rainier Fritters

These delicious fritters are a fabulous way to enjoy Pacific razor clams, which we sell frozen in one pound vacuum-sealed pouches. This recipe pays homage to both traditional new England Clam Fritters and crispy Vietnamese-style Salt and Pepper Squid. We tried to take a beautiful picture of the finished fritters, but we ate them too fast... by the time we remembered it was a photo shoot there were only 2 left.

Ingredients:


1 C raw Razor clams, thawed and chopped fine
1 ¼ C All Purpose Flour
1 tsp Baking Powder
½ tsp Kosher Salt
¼ C Whole Milk
¾ C Rainier Beer
1 Egg, whisked
Vegetable Oil - enough to fill a fryer or high sided pot
Salt and freshly ground Black Pepper to finish

Procedure:

Sift together dry ingredients. Combine milk, beer, and egg in a separate bowl, then whisk into the flour mixture until batter is fully incorporated and smooth.

Fold in the finely chopped razor clams, and form the mixture into 1 oz balls (slightly smaller than a foosball).

Drop the balls into 350° oil and fry till golden brown and cooked through.

Toss freshly fried fritters with plenty of salt and black pepper

Dip in your favorite sauce! We like tartar or Vietnamese nước chấm.
